To make Mix Veg Vegetable, take 1 potato, 2 carrots, 100 grams beans, 70 grams green peas, 150 grams cauliflower, 50 grams capsicum, ½ teaspoon dry mango powder, ½ teaspoon salt, ½ teaspoon Kashmiri red chilli, 8-10 cashew nuts, Take oil for deep frying. To make mixed veg curry, first wash and cut all the vegetables like potatoes, carrots, beans, green peas, cauliflower and capsicum. Then put these vegetables in hot oil and fry them. After all the vegetables are cooked, take them out in a plate. Now add dry mango powder, salt and Kashmiri red chilli powder to the vegetables and mix. Keep the cashew nuts soaked in hot water. To make vegetable gravy, heat 2 spoons of oil. Then add bay leaves, black cardamom, green cardamom, cinnamon, cumin and grated ginger and fry. After some time add onion to it.
After the onion is cooked, add cashew nuts and salt to it. Then add ginger garlic paste to it and stir. Now add tomatoes and after they melt, mix turmeric powder, chilli powder, coriander powder, cumin powder and water in it. Cook till all the spices leave the pan and then cool them and grind them to prepare a paste. Now to make gravy, heat this paste in a pan and mix Kasuri methi, green chillies, garam masala, chaat masala, green coriander, ginger flakes and fried vegetables in it. Finally, mix cheese pieces, cream and butter and turn off the gas. Your mixed veg vegetable is ready.
